Onions are a pretty big deal in my house. They seem to make their way into most of my recipes. My husband and big kid even like to eat them raw! So, when I received an enormous bag of Georgia grown, Real SweetĀ® VidaliaĀ® Onions from Shuman Produce, I knew they wouldn't last long.
The onions arrived on my doorstep at the perfect time. I had about an hour before I expected my son to walk through the door with a hungry belly.. And knowing we had soccer practice that afternoon, I needed a hearty, healthy snack to get him through until dinner. So I got to work chopping and creating and here's what I came up with.
When my big, hungry child arrived home, he was excited to ādumpā all of the veggies in and create his own salad. Iāve found that the more he helps cook and create, the more he eats. He ate a huge bowl of the salad and even picked the onions out to eat raw. He definitely approved! I love this dish as an after school power snack, as lunch or as a side. Itās a great summer dish to serve with barbecue or anything on the grill.
